Organoleptic notes

Deep and impenetrable red ruby. Aristocratic elegance at the olfaction and intensity of fragrances. In sequence: black cherry jam, anise, chocolate, coffee, tobacco and balsamic eucalypt. Light smoky marks in the background. Strong at the taste with a juicy texture. Its alcoholic tenor is balanced with its velvety tannin and freshness. At the end, long menthol scent.

Food pairings

Red wine braised ossobuco, mallard with caramelized shallot, pici (pasta) with hare ragu. According to tradition: grilled “castrato”, Apulian “marro”, horse meat chop in tomato sauce.

Vinification: Crushing and de-stemming followed by 15-18 days of resting over the skins. Then drawing and aging in Allier barriques for 12 months and in stainless steel for 6 months.
Aging: In stainless steel – barrique.
