Organoleptic notes

Dark and intense red ruby. Exuberant variety of smells: plum jam, cherries, figs and raisin. Roses and violet bouquet. Essential oils of cinnamon, orange, juniper. Soft and full taste. Strong and balanced, is perfect for the traditional Apulian long cooked food. Ends with a final taste of red fruits jam.

Food pairings

Grilled Florentine steak, red wine pot roast, pheasant chest with dates.
According to tradition: “spuntature” ragu of Apulian tradition, lamb in cooking pot, slices of horse meat in tomato sauce.

Varietal composition: Primitivo 100%.
Vineyards location: Cellino San Marco (BR).
Training: Alberello.
Harvest: In order to have an overmaturation of grape, the harvest time is around the third decade of September. The manual harvesting is carefully portrayed to select the best grapes.
Vinification: Crushing and de-stemming followed by 12-15 days of resting over the skins. Then drawing, malolactic fermentation and aging in barriques.
Aging: In stainless steel – barrique.
