Organoleptic notes

Hazy but bright straw colour. Light scent of white flesh fruits and aromatic herbs. Fresh to taste. Gentle sapidity with marks of fruits and fresh hazelnut. Soft and pleasant, closes the tasting with a balanced alcoholic mark.

Food pairings

Seabass carpaccio, sashimi, scallops on saffron cream.
According to tradition: acquasale, “guazzetto” of mussels from Taranto, pasta and sun dried tomatoes.

Varietal composition: Malvasia Bianca 100%.
Vineyards location: Cellino San Marco (BR) – San Donaci (BR).
Training: Espalier (5.000 stumps).
Harvest: First decade of September
Vinification: Soft crushing and de-stemming. Then must is cooled at 10°C for a natural clarification. Then alcoholic fermentation in stainless steel barrel at 15°C.
Aging: In stainless steel until bottling.
