Organoleptic notes

Strong red color with violet reflections. Intense perfumed bouquet, with floral and fruity scents. The taste begins softly and is then balanced by its freshness with a consistent and broad aftertaste.

Food pairings

Baked pork loin, calf skewers with lard, chicken with peppers.
According to tradition: “monachelle” snails soup, lamb with fennel, apulian cacio.

Serving temperature: 18°C.

Appelation: I.G.P. Salento Rosso.
Varietal composition: Malvasia nera 100%.
Vineyard location: Cellino San Marco (BR), San Donaci (BR).
Vinification: After crushing and de-stemming, grapes are required to macerate for 10-15 days at controlled temperature of 24-25°C. Then drawing and soft pressing at the end of fermentation.
Aging: In stainless steel until bottling.
Serving temperature: 18°
