Organoleptic notes

Bright red ruby. Dried plum and rhubarb with blood orange, characterize the smell of this single-varietal wine of Malvasia Nera from Lecce. At the first taste, is similar to a juicy and crunchy fruit, followed by freshness and a light sapid mark that perfectly balances the alcoholic softness. Noble and silky tannin. Closes with a final taste of sweet spices.

Food pairings

Baked pork loin, calf skewers with lard, chicken with peppers.
According to tradition: “monachelle” snails soup, lamb with fennel, apulian cacio.
Serving temperature: 18°C.

Varietal composition: Malvasia nera 100%.
Vineyards location: Cellino San Marco (BR), San Donaci (BR).
Training: Alberello (4.500 stumps)
Harvest: First decade of October.
Vinification: After crushing and de-stemming, grapes are required to macerate for 10-15 days at controlled temperature of 24-25°C. Then drawing and soft pressing at the end of fermentation.
Aging: In stainless steel until bottling.
