Organoleptic notes

Red cherry gloss is its colour. Roses and wildflowers prevail over wild strawberries and currant. Citrus marks are intense. The gustatory intensity comes from the comeback taste of red fruits and orange, balancing sapidity and freshness. At the end persists a fine mineral memory.

Food pairings

Pizza margherita, tuna carpaccio.
According to tradition: prawns tartare of Gallipoli, Salento fish soup, tiella.

Varietal composition: Negroamaro 70%, Malvasia nera 30%.
Vineyards location: Cellino San Marco (BR).
Training: Espalier and alberello (4.500/5.000 stumps).
Harvest: Second/third decade of September.
Vinification: After the crushing and de-stemming, 24 hours of resting over the skins. Drawing and fermentation at 15°C.
Aging: In steel until bottling.
