Organoleptic notes
Intense ruby red color with garnet reflections. Intense and complex nose, hints of ripe red fruits with spicy notes of cinnamon and tobacco, typical smells of the Mediterranean scrub, including sage and rosemary. Round and robust on the palate, soft and persistent tannins.
Food pairings
Hare cacciatore, coda “alla vaccinara”, roe deer cooked in aromatic herbs.
According to tradition: grilled lamb, tripe in tomato sauce with potatoes, pallone cheese of Gravina.

Vinification: Manual harvesting in boxes of the grapes slightly overripe between the last ten days of September and the beginning of October, followed by a hand selection of the bunches on a sorting tape, a crushing-destemming, cryomaceration of 4 days, alcoholic fermentation with maceration of the skins in contact for 10-12 days at 20-22 °C with selected yeasts. Racking and malolactic fermentation in steel.
Aging: Aging for 8-10 months in French oak barriques of second and third passage, in bottle for 6 months.
