Organoleptic notes

Bright and impenetrable. Perfumed mulberry range, cranberry juice and light menthol mark. The fruity taste at the palate meets a soft and embracing tannin. Long and persistent final.

Food pairings

Stuffed pheasant, salted tenderloin, agnolotti ragout.
According to tradition: bread polpette in tomato sauce, Salento sausage, lamb in tomato sauce.

Vineyards location: Cellino San Marco (BR), San Pietro Vernotico (BR).
Training: Alberello and espalier (4.500 stumps).
Harvest: First decade of September.
Vinification: After the crushing and de-stemming, the must remains in maceration in its husks for 6-7 days at a controlled temperature of 25-26°C.
Aging: In stainless steel until bottling.
