Organoleptic notes
Vivid cherry-coloured. Raspberry, red mulberry and pomegranate followed by a delicate smell of bergamot define its olfactory range. Fresh and sapid fruit juice. Balance and body characterize the good structure of this rosé.
Food pairings
Prawns tartare, salmon trout, braised codfish.
According to tradition: friselle with tomatoes and onion, octopus and potatoes, seafood with cavatelli.

Varietal composition: Negroamaro 100%
Vineyards location: Cellino San Marco (BR).
Training: Espalier (4.500 stumps).
Harvest: Second decade of September.
Vinification: Grapes are required to macerate for 12-14 hours in order to have the right shade of colour of the skins and aromatic substances typical of Negroamaro. The flower must is fermented at 14-15°C in thermo-controlled stainless steel tanks until the end of the alcoholic fermentation.
Aging: n stainless steel until bottling.
