Red ruby with garnet shades, black and maraschino cherry, humus, cocoa powder, persistence and tannin characterize this wine and its territory.

Food pairings

Beef strips, escalope, stew with potatoes.
According to tradition: Salento parmigiana, fried polpette, lentils and sausage.

Appellation: D.O.P. Salice Salentino Rosso.
Varietal composition: Negroamaro 80% – Malvasia nera 20%.
Vineyards location: Cellino San Marco (BR), Salice Salentino (LE).
Training: Alberello and espalier (4.500 stumps).
Harvest: Third decade of September.
Vinification: After the crushing and de-stemming, the must remains in maceration in its husks for 6-7 days at a controlled temperature of 24-25°C.
Aging:In stainless steel until bottling.
