Training system: Espalier (5,000 vines per hectare).
Vinification: Soft pressing, static decantation of the must, fermentation at controlled temperature of the must (15-17 ° C) with selected yeasts.
Maturation and aging: Refining and stopping in steel for three months with use of batonnage.
Second fermentation: Charmat method in steel tanks for 30 days, with use of batonnage in order to favor the transfer of noble substances by the yeasts.
