ITALIAN SPARKLING WINE

Organoleptic notes

Straw yellow with green hints. Reveals a delicate hint of citrus with aromas of yellow fruit. Fine and persistent perlage with a soft and aromatic taste.

Food pairings

Excellent as an aperitif, with appetizers of all types and first courses based on fish. Serve at: 6/7 ° C.

Classification:Quality Sparkling Wine.
Grapes: : Verdeca – Malvasia Bianca.
Training system: Espalier (5,000 vines per hectare).
Vinification: Soft pressing, static decantation of the must, fermentation at controlled temperature of the must (15-17 ° C) with selected yeasts.
Maturation and aging: Refining and stopping in steel for three months with use of batonnage.
Second fermentation:  Charmat method in steel tanks for 30 days, with use of batonnage in order to favor the transfer of noble substances by the yeasts.
