Organoleptic notes

Intense ruby red, release on the nose a complex aromatic range that goes from fruity notes of black currant and plum to notes of thyme and ink reached by touches of flint in the finish. The palate is fresh and warm at the same time, guided by an important tannic texture, excellent structure, elegant and excellent persistence. It smells long with hints of red fruit and menthol notes.

Food pairings

Pigeon in cooked must sauce, pheasant stuffed with plums and chestnut, boar ragout.
According to tradition: tripe rolls in tomato sauce, terracotta stewed donkey.

Vinification: After crushing and destemming, 5 – 8 days of permanence on the skins follow; after racking, malolactic fermentation in steel tanks.
Aging: In steel tank until bottling.
