Organoleptic notes

Straw-yellow with gold and green shades. Intense and fine with a scent of apricot, flowers and rosemary. Its balance between freshness, sapidity and alcoholic tenor is perfect. Lovely and persistent, the citrusy and lightly balsamic final creates harmony to the taste.

Food pairings

Nettle risotto, buffalo mozzarella cheese.
According to tradition: “pancotto” with vegetables, orecchiette with turnip greens, puccia with onions and olives.

Appellation: I.G.P. Salento.
Varietal composition: Verdeca 100%.
Vineyards location: San Donaci (BR).
Training: Espalier and alberello (5.000 stumps).
Harvest: First decade of September.
Vinification: Soft crushing and de-stemming. Then must is cooled at 10°C for a natural clarification. Then alcoholic fermentation in stainless steel barrel at 15°C.
Aging:In stainless steel until bottling.
