Organoleptic notes
Dark and intense red ruby. Are clearly perceived at the olfaction sweet fruits, blackberries and blueberries, scents of coffee and orange skin with balsamic marks. Great structure sustained by silky and worthy tannins. Marked alcoholic taste balanced by a good sapidity and freshness with a long and powerful final.
Food pairings
Deer ribs in berries, baked pork shank.
According to tradition: grilled sausage, horse meat roll in tomato sauce, caciocavallo podolico cheese with long maturing.
Serving temperature: 18°C.

Vineyards location: Manduria (TA).
Training: Alberello.
Harvest: Around first decade of September. The manual harvesting takes place at the cooler moments of the day, in boxes with an accurate selection of grapes.
Vinification:Crushing and de-stemming followed by 12-15 days of resting over the skins. Then drawing, malolactic fermentation and aging in barriques.
Aging:in stainless steel – barrique
